A Blended Scotch Whisky is crafted from the 3 essential and apparently simple ingredients of grain, water and yeast, but each must be of a high quality, because all give the whisky its ultimate character.
WILLIAM PEEL is the unique result of the encounter of these simple ingredients which are shaped by the precise and painstaking expertise of our whisky teams.

The choice of grain

It all begins with the barley. The Malt whisky process begins with the malting of the barley by soaking for several days in warm water to encourage germination. It is this malting process that allows the grain to develop its delicious flavours. As soon as germination begins, the grain is dried in a kiln to further concentrate the flavours.
Grain whiskies are always made from blends that include other grains, such as wheat, corn and rye.

Mashing and fermentation

After grinding, the dried grain is mixed with warm water in a mash tun to begin the extraction of soluble sugars. The resulting ‘wort’ is cooled and passes into fermentation tanks, where yeast is added to convert the sugars to alcohol; the liquid is now referred to as ‘wash’.

Distillation

The malt whisky “wash” is distilled twice in a copper still. A special process for a unique result. The first concentrates the alcohol and encourages flavour development. The second yields the most pure spirit, with an alcoholic strength of around 70 % volume.
Grain whisky wort is distilled in a different way, using a continual process in a distillation column.

Maturation

The flavour of whisky continues developing after it has been matured into oak casks. Complex chemical reactions then occur between the wood and the distilled spirit to create its unique aroma. Its character is also shaped by the fact that wood is porous, so over time it breathes in air from the environment in which it is stored… Whiskies are matured for at least 3 years.

Blending

Only casks of the best grain and malt whiskies are selected. These are then meticulously blended to create the unique signature of WILLIAM PEEL: roundness and generosity of malted and fruity notes.
